Fetzer Science Lecture: Dr. Cheryl R. Mitchell: "Milking Primary Food Sources"
Dr. Cheryl Mitchell is recognized as a world authority on sweeteners, rice processing, and the extraction and metabolism of inulin.
She has spent the last 30 years working in the food industry, creating wholesome ingredients through unique food processing methods that retain and maximize the natural beneficial components of foods.
Her lecture, titled "Milking Primary Food Sources," will explain her research on "milking" whole grains and how the process will lead to the replacement of refined ingredients with high nutrient density whole grains.
